Servings
Ingredients
Meat
- 1½ lb boneless skinless chicken breasts, sliced in half horizontally into 4 cutlets and pounded to 1/2 inch
Dairy and eggs
- 2 large eggs, beaten
- ½ cup grated Parmesan, divided
- 1½ cups shredded mozzarella
Pantry
- ½ cup all-purpose flour
- 1 cup panko breadcrumbs
- 1½ cups marinara sauce
- 12 oz spaghetti
- 3 tbsp olive oil
- 1 tsp salt
Spices
- 1 tsp dried Italian seasoning
Estimated cost: about $19.00 for the whole recipe, from typical US grocery prices. Your store and region will differ.
Steps
- Heat the oven to 425 degrees F and set a rack in the middle. Line a rimmed baking sheet with parchment and brush it with 1 tablespoon of the oil.
- Set up three shallow dishes: flour with a little salt, beaten eggs, and panko mixed with 1/4 cup Parmesan, the Italian seasoning, and the remaining oil.
- Dredge each cutlet in flour, dip in egg, then press into the panko mixture to coat. Set on the baking sheet.
- Bake for 15 minutes, flip, and bake 8 minutes more, until golden.
- Spoon marinara over each cutlet and top with mozzarella and the remaining Parmesan. Bake 5 to 7 minutes, until the cheese is bubbling and the chicken is 165 degrees F.
- Meanwhile, boil the spaghetti in salted water until al dente, drain, and toss with a little extra marinara. Serve the chicken over the pasta.
Equipment
rimmed baking sheet, large pot
Tips
- Toss the panko with the oil first so it browns evenly without frying.
- Slice leftovers into a sub roll for a next-day parm sandwich.
Easier for kids
- Cut the chicken into strips and serve the marinara on the side for dipping.
- Toss the kids' spaghetti with a little olive oil if they don't like sauce (contains wheat).
