Ingredients
Produce
- 1½ lb Yukon gold potatoes, scrubbed and cut into 1/2-inch cubes
- 1 bell pepper, diced
- ½ yellow onion, diced
- 2 scallions, sliced
Meat
- 12 oz bulk breakfast sausage (labeled gluten-free and dairy-free)
Dairy and eggs
- 4 large eggs
Pantry
- 1 tbsp cooking oil
- 1 tsp salt
Spices
- 1 tsp smoked paprika
- ½ tsp garlic powder
Estimated cost: about $10.00 for the whole recipe, from typical US grocery prices. Your store and region will differ.
Steps
- Microwave the potatoes in a covered bowl with 2 tablespoons of water for 4 minutes, until barely tender. Drain.
- Cook the sausage in a large skillet over medium-high heat for 5 minutes, breaking it up, until browned and cooked through to 160 degrees F. Move it to a plate, leaving the fat in the pan.
- Add the oil and potatoes in an even layer. Cook for 5 minutes without stirring, then stir and cook 3 minutes more, until crisp and golden.
- Add the bell pepper, onion, paprika, garlic powder, and salt. Cook 3 minutes, then stir the sausage back in.
- Make 4 wells in the hash and crack in the eggs. Cover and cook for 3 to 5 minutes, until the whites are set. Top with scallions.
Equipment
large skillet with lid
Tips
- Resist the urge to stir early. The crust forms when the potatoes sit undisturbed.
- Use sweet potatoes for a sweeter twist.
