Ingredients
Produce
- 1½ lb baby potatoes, halved
- 1 lb green beans, trimmed
- 4 cloves garlic, minced, divided
- 2 tsp fresh thyme or rosemary leaves, chopped
Meat
- 4 New York strip steaks (about 8 oz each, 1-inch thick), patted dry, at room temperature
Dairy and eggs
- 4 tbsp butter, divided
Pantry
- 2 tbsp cooking oil, divided
- 1½ tsp salt, divided
- 1 tsp black pepper
Estimated cost: about $36.00 for the whole recipe, from typical US grocery prices. Your store and region will differ.
Steps
- Heat the oven to 425 degrees F. Toss the potatoes with 1 tablespoon of oil and half the salt on a rimmed baking sheet. Roast for 20 minutes.
- Melt 2 tablespoons of butter with half the garlic and the herbs. Toss the potatoes with it, push them to one side, and add the green beans with the remaining salt. Roast 12 to 15 minutes more, until the potatoes are crisp and the beans are tender.
- Meanwhile, season the steaks with salt and pepper. Heat the remaining oil in a heavy skillet over high heat until just smoking.
- Sear the steaks for 3 to 4 minutes per side without moving. In the last minute, add the remaining butter and garlic and spoon it over the steaks.
- Cook to your preference. The USDA recommends 145 degrees F with a 3-minute rest. Rest the steaks 5 minutes before slicing. Serve with the potatoes and green beans.
Equipment
large rimmed baking sheet, cast-iron or heavy skillet
Tips
- Pull the steaks a few degrees early since they keep cooking as they rest.
- Pat the steaks very dry for the best crust.
Easier for kids
- Cut the steak into small bite-size pieces.
- Serve the kids' potatoes with just a little butter (contains milk).
